I use this vinaigrette for my small dinner side salads. My friends always ask me for the recipe, so this gave me the idea to make a video to show them how to make it. This is what made me think about making cooking videos to go along with my recipes. This vinaigrette can ber customized with different flavored vinegars, oils and herbs to suit your personal taste and make it your own.

Ingredients
- 2 tbsp mayonnaise
- 2 tbsp Dijon Mustard
- 1/4 cup red wine vinegar
- 1/2 cup olive oil extra virgin
- 1/2 cup canola oil
- 2 cloves garlic crushed
- 1/2 shallot finely minced
- 2 tsp Chef Joe's Perfect Salt and Pepper
- water cold as needed
- 2 tsp Chef Joe's Italian Seasoning
Instructions
- Tip: Place a towel under the bowl to prevent it from slipping on your counter.
- In a bowl, whisk together mayonnaise and mustard.
- Then add the red wine vinegar, garlic, shallots and Chef Joe's Italian Seasoning.
- Whisk these together. This is your base.
- Very slowly whisk in the oil to create an emulsion.
- If the dressing gets too thick, add a little cold water to thin it to your desired consistency.
