This is a basic vinaigrette that is very flavorful on salads and can be customized to your liking. Once your family has this, you will never want bottled dressing again!

- 2 tbsp mayonnaise
- 2 tbsp Dijon Mustard
- 1/4 cup red wine vinegar
- 1/2 cup olive oil extra virgin
- 1/2 cup canola oil
- 2 cloves garlic crushed
- 1/2 shallot finely minced
- 2 tsp Chef Joe's Perfect Salt and Pepper
- water cold as needed
- 2 tsp Chef Joe's Italian Seasoning
Tip: Place a towel under the bowl to prevent it from slipping on your counter.
In a bowl, whisk together mayonnaise and mustard.
Then add the red wine vinegar, garlic, shallots and Chef Joe's Italian Seasoning.
Whisk these together. This is your base.
Very slowly whisk in the oil to create an emulsion.
If the dressing gets too thick, add a little cold water to thin it to your desired consistency.
