Ingredients
- 2 lbs chicken breast boneless, skinless
- 1/2 cup buttermilk
- 1/2 cup hot sauce Louisiana Style
- 3 cups flour all purpose
- 1 tbsp baking powder
- 3 tbsp Cajun seasoning
- 2 qt canola oil for frying
Instructions
- Cut the chicken breasts into 1/4 inch thin strips, about 3 to 4 inches in length.
- In a bowl, whisk together the buttermilk, hot sauce, and 1 teaspoon Cajun Seasoning
- Put the chicken strips in the mixture and toss to coat, Cover and refrigerate for about 2 hours or overnight.
- In a large shallow bowl or pie plate, combine the flour, baking powder and the remaining Cajun Seasoning
- Remove the chicken pieces from the marinade, shaking off any excess. Coat each piece with the flour mixture, arranging them in a single layer on a baking sheet.
- In a large saucepan or deep dutch oven , heat vegetable oil to 350F. Fry the chicken strips in small batches, cooking for 3 to 4 minutes, or until golden brown.
- Remove to paper towels to drain.
- If you have any extra Cajun seasoning you may sprinkle over strips while still hot.
- Serve these tasty chicken strips with chipotle or Buffalo aioli
