Cajun Fried Chicken Strips

Fried chicken breast strips, marinated then coated in seasoned flour and dusted with Cajun seasoning

Ingredients

  • 2 lbs chicken breast boneless, skinless
  • 1/2 cup buttermilk
  • 1/2 cup hot sauce Louisiana Style
  • 3 cups flour all purpose
  • 1 tbsp baking powder
  • 3 tbsp Cajun seasoning
  • 2 qt canola oil for frying

Instructions

  • Cut the chicken breasts into 1/4 inch thin strips, about 3 to 4 inches in length.
  • In a bowl, whisk together the buttermilk, hot sauce, and 1 teaspoon Cajun Seasoning 
  • Put the chicken strips in the mixture and toss to coat, Cover and refrigerate for about 2 hours or overnight.
  • In a large shallow bowl or pie plate, combine the flour, baking powder and the remaining Cajun Seasoning 
  • Remove the chicken pieces from the marinade, shaking off any excess. Coat each piece with the flour mixture, arranging them in a single layer on a baking sheet.
  • In a large saucepan or deep dutch oven , heat vegetable oil to 350F. Fry the chicken strips in small batches, cooking for 3 to 4 minutes, or until golden brown.
  • Remove to paper towels to drain.
  • If you have any extra Cajun seasoning you may sprinkle over strips while still hot.
  • Serve these tasty chicken strips with chipotle or Buffalo aioli
