Cajun Fried Chicken Strips
Fried chicken breast strips, marinated then coated in seasoned flour and dusted with Cajun seasoning

- 2 lbs chicken breast boneless, skinless
- 1/2 cup buttermilk
- 1/2 cup hot sauce Louisiana Style
- 3 cups flour all purpose
- 1 tbsp baking powder
- 3 tbsp Cajun seasoning
- 2 qt canola oil for frying
Cut the chicken breasts into 1/4 inch thin strips, about 3 to 4 inches in length.
In a bowl, whisk together the buttermilk, hot sauce, and 1 teaspoon Cajun Seasoning
Put the chicken strips in the mixture and toss to coat, Cover and refrigerate for about 2 hours or overnight.
In a large shallow bowl or pie plate, combine the flour, baking powder and the remaining Cajun Seasoning
Remove the chicken pieces from the marinade, shaking off any excess. Coat each piece with the flour mixture, arranging them in a single layer on a baking sheet.
In a large saucepan or deep dutch oven , heat vegetable oil to 350F. Fry the chicken strips in small batches, cooking for 3 to 4 minutes, or until golden brown.
Remove to paper towels to drain.
If you have any extra Cajun seasoning you may sprinkle over strips while still hot.
Serve these tasty chicken strips with chipotle or Buffalo aioli
