Equipment

  • 3qt sauce pot

Ingredients

  • 1 cup long grain rice
  • 1/4 cup orzo
  • 1/2 small shallot minced
  • 1 clove garlic peeled and minced
  • 2 cups chicken stock
  • 1 tablespoon canola oil

Instructions

  • Add canola oil to sauce pan and heat to medium high
  • Add the rice and orzo and sauté until the orzo is lightly toasted
  • Add the minced shallot and garlic then sauté for about 30 seconds
  • Slowly pour in the chicken stock being careful as it may boil and steam
  • Bring rice to a boil, then reduce heat to low, cover with tight fitting lid.
  • Set timer for 15 minutes
  • After 15 minutes turn off heat and set timer for another 5 minutes leaving the rice rest and continue to cook with carryover heat.
  • After 5 minutes, remove lid and fluff rice with fork or spoon and serve
