Rice Pilaf with Orzo
A great side to serve with chicken or seafood dishes

- 1 cup long grain rice
- 1/4 cup orzo
- 1/2 small shallot minced
- 1 clove garlic peeled and minced
- 2 cups chicken stock
- 1 tablespoon canola oil
Add canola oil to sauce pan and heat to medium high
Add the rice and orzo and sauté until the orzo is lightly toasted
Add the minced shallot and garlic then sauté for about 30 seconds
Slowly pour in the chicken stock being careful as it may boil and steam
Bring rice to a boil, then reduce heat to low, cover with tight fitting lid.
Set timer for 15 minutes
After 15 minutes turn off heat and set timer for another 5 minutes leaving the rice rest and continue to cook with carryover heat.
After 5 minutes, remove lid and fluff rice with fork or spoon and serve
