Grill Pan Salmon with Sautéed Cannellini Beans

This is a great fast weeknight meal that can be cooked quickly, the key is having your grill pan and skillet preheating while you prepare the ingredients

Equipment

Ingredients

  • 5 6oz salmon fillets skin and pin bones removed
  • 1/4 cup olive oil
  • 2 cans Cannellini beans drained
  • 3 cloves garlic minced
  • 3 strips bacon cut in pieces
  • 1/2 each shallot minced
  • 1/4 cup white wine dry
  • 2 cups Spinach fresh, and roughly chopped
  • 3 tbsp basil fresh, chiffanade
  • 20 each grape tomatoes halved

Instructions

  • Preheat both grill pan and skillet 
  • Add the bacon to the skillet and render the bacon fat
  • When the bacon is almost crisp, salt and pepper your salmon,
    Spray the grill pan with some nonstick spray then put the salmon in the grill pan to cook.
  • Into the skillet add the shallots, tomatoes, garlic, and Cannellini beans to the bacon. Add the white wine and cook for a few minutes until the alcohol cooks out.
  • Add the fresh basil, and spinach, toss and let wilt into the bean mixture salt and pepper to taste. Turn off heat
  • Flip the salmon over and cook the other side until done
  • Spoon the Cannellini beans into the center of a pasta bowl and top with the grilled salmon.
  • Drizzle with a little more olive oil and garnish with micro greens or chopped Italian parsley.
